As a plant based cheese ingredients supplier we understand that it is challenging to create a cheesy flavor in plant based cream, block and hybrid cheese. This is made more difficult by the naturally beany off notes of many vegetable proteins.
The traditional solution has been to add a cheese flavor to the mix. At AAK, we have developed a unique way of improving the taste, texture and nutritional profile of fermented or matured plant based cheese.
Inspired by the way taste develops in dairy cheese, our innovative, alternative cheese solutions (proprietary IP to AAK) use plant based oils and fats to create a natural cheesy flavor in plant based cheese.
It is suitable for any plant based cheese made using a fermentation process, and can add natural cheesy flavor to cream, block and hybrid cheeses.
Uniquely, in plant based block or hybrid cheese, the cheesy flavor will continue to develop through the maturation process, helping them to behave more like their dairy counterparts.
Our innovation can make plant based cream cheese smoother with a creamier mouthfeel. It can also improve nutritional profile, since it contains less saturated fatty acids (SAFA) than coconut oil, which is often used in plant based cheese. It could decrease the need for additional flavoring, too, potentially leading to a cleaner label.
Because our AkoPlanet™ cheese solutions are made from sustainably sourced plant based oils and fats, it’s likely you can improve the Life Cycle Assessment (LCA) rating of finished products.

Our state-of-the art plant-based and dairy pilot plant is designed for maximum agility and innovation – for plant-based cheese solutions, whipped toppings, frozen desserts, and yoghurt.
With the capacity for heat treatment, pasteurization, mixing and homogenization, it can be adapted to meet the needs of specific recipes or mirror individual production processes. We have specialist equipment for making ice cream, frozen desserts, and fermented dairy products too.
We can bridge a useful gap for customers and partners that may have laboratory-scale testing facilities but are not yet ready to move to full factory trials.
Uniquely, in addition to our world-class knowledge of oils and fats and technical expertise regarding their application, you will also be able to access all the prototyping, culinary development, sensory testing, and market insights you need right here, in this building.
